Culatello: Il Re dei Salumi!

Laatst bij de Italiaan op de Zuidmarkt viel mijn oog op een droge karaktervolle gerookte ham. Zonder veel na te denken bestelde ik 250 gram (de meeste charcuterie bestellen we voor een week), maar toen ik het prijskaartje bekeek, besloot ik toch maar te beginnen met 100 gram. Aan 42 euro per kilo wilde ik eerst wel eens uittesten of het die prijs wel waard was.

Wel: de Culatello di Parma heeft ons bijzonder gesmaakt. Een zoektochtje op internet later blijkt dit toch wel één van de betere delicatessen uit Parma is (en de stad heeft toch wel al een aantal van Italië's top delicatessen om mee te pronken):

"Culatello is one of the most pretigious "Salami" of the Italian tradition, it originates in the Parma province and in particular from the Zibello area. It is made from the muscular rear legs of the pig, with the skin and bones removed, matured in the ars on the banks of the river Po and of the lower Parma.Taking Prosciutto as reference which is made from the internal thigh, culatello is obtained from maturing only the rear musclc of the thigh, for at least 12 months. The other parts are used to produce "fiocchetto". This "salami" is made to mature inside bladder, which is then tied with a course network of string.

Its weight varies from 3 to 5 kg, its form is charateristcally pear shaped. To obtain a culatello you have to "disassemble" a thigh, giving up its use for an already valuble product such as "prosciutto", this together with the craftsmans workmanship, the lengthy maturing and its pleasurable taste explain the particularly high cost."

Er bestaat zelfs een prestigieus Consorzio del Culatello di Zibello! Over de smaak: "The scent is intense and distinctive, while the taste is sweet and delicate. The importance of the local geography for the quality of the product lies in the particularly moist climatic conditions typical to the territory along the River Po where Culatello di Zibello is traditionally produced. The hot summers and foggy autumns form an ideal combination for the production of Culatello di Zibello which is aged gradually to bring out fully its unmistakable scent and taste."

Om maar te zeggen: dit is vanaf nu toegevoegd aan mijn wekelijks boodschappenlijstje!
